Cloud Bread (Bariatric 2)

No, I’m not taking crazy pills. This is good in its own right AND you can use it like actual bread. I’ve used it as crust for mini pizzas, bun for a turkey dog, and just toasted it with a bit of cream cheese and smoked salmon.

Ingredients

  • 3 eggs
  • Cottage cheese
    • Whole milk works best, but you can dial that down if you want
  • 1/4 tsp xanthan gum

Step by Step

  1. Preheat oven to 300 degrees
  2. Separate the yolks and whites into two bowls, making sure not to get any yolk in the whites at all
  3. Mix the cottage cheese with the yolks until smooth
    1. Yeah, I know. It will never get totally smooth. But do it until the lumps are small enough that the top looks smooth
  4. After rinsing your mixer, whip the egg whites and xanthan gum until stiff peaks form
  5. Gently fold the yolks and whites back together until a smooth, fluffy batter formsIMG_20170705_221610
  6. Scoop the batter in approximately 1/4 cup increments onto a lightly greased baking sheet. It should form 8 rounds about 3 inches in diameter
  7. Bake in 300 degree oven for 25-30 minutes, or until golden brown
  8. Let cool on rack until they become more bready (another half hour or so)
